Caulirice Burrito Bowls

I love Mexican food! Sometimes it can be a bit high in calories depending on what you eat. Chips, salsa, and guac are my weakness. I am always trying to find new healthy alternatives to cook. One of my favorite things to make is cauliflower rice burrito bowls. They are extremely easy to make and pretty healthy. 

Fun fact about me I do not really like raw cauliflower but I LOVE cauliflower rice and pizzas. I also really enjoy cooking with it. When I was younger my mom would always tell me that cauliflower was broccoli’s cousin to try to convince me to eat it. She tried to trick me but I could always taste the difference! 

To make these I used a bag of frozen garlic and herb riced cauliflower, 1lb of ground turkey, taco seasoning, sweet red and orange peppers, red onion, lettuce, taco cheese, salsa, avocado, and sour cream. Although I usually use plain greek yogurt. I love using ground turkey since I try not to eat red meat you can’t even tell the difference. Whenever I go to Chipotle I love getting the green peppers and onions. I made my own variation of them using red and orange peppers. I cut up the peppers and onions tossed them in a pan with olive oil, fresh garlic, and oregano. While the peppers were cooking, I browned the ground turkey and popped the cauliflower rice in the microwave for 4 minutes. After everything was finished I assembled my bowl. Starting with my base as the cauliflower rice, I added ground turkey, followed by peppers and onions, lettuce, salsa, avocado, a dollop of sour cream, a sprinkle of cheese on the meat and a dash of Valentina and Chipotle Tabasco sauce. It was absolutely delicious! The best part is that I have leftovers and I will be able to enjoy them again very soon! 

This dish is a really good option if you are looking for something low carb but you refuse to give up the taste. I recommend giving these a try!  They are also pretty quick to make they only took about 40 minutes from start to finish.

My First Homemade Pizza Dough

Pizza is my favorite food! I could eat it for breakfast, lunch, and dinner. I love it piping hot out of the oven or cold leftovers from the fridge. Thin crust is my favorite because it’s so nice and airy. I love cheese, pepperoni, and Margarita I will eat almost anything on it except I am not really a fan of pineapple on Pizza. 

I have made pizza in the past when I purchase the dough and roll it out, but I have never made it from scratch from start to finish. I decided now was the perfect time to give it a try! I found a simple recipe on Pinterest for making pizza dough; flour, baking powder, salt, greek yogurt, and garlic powder. At first, I was a  little surprised that you can make dough with greek yogurt. Making it with greek yogurt is a low-fat option but it does not lack flavor! 

The entire process from start to finish took me about an hour. First I started by mixing 1 cup of all-purpose flour with 1 and a half teaspoons of baking powder [if you don’t have self-rising flour all you need to do is add baking powder]. I added ½ a teaspoon salt and ¾ of a teaspoon garlic powder and mixed everything together. Next, I added 1 cup of Plain Greek Yogurt to the Dry ingredients I mixed all of that until the dough formed. 

The recipe I used did not say that you needed to chill the dough, I would recommend chilling the dough for at least 30 minutes although you can let it chill longer. Chilling it allows the dough to be more manageable to work with. While the dough was chilling I preheated the oven to 475 and placed my olive oil covered pizza stone in the oven to heat up. After 30 minutes of chilling the dough, it was time to roll it out.  The key is to use A LOT of flour when rolling out the dough because it is very sticky!

Once I was finished rolling the dough, I took the stone out of the oven and sprinkled the stone with cornmeal. I love the taste of the crust when it has a little bit more of a crunch. I placed the dough on the stone and spread it with my favorite pizza sauce Don Pepino, followed by shredded mozzarella & parmesan cheese, turkey pepperoni, oregano, red pepper flakes & garlic powder. I love putting the spices on my pizza before putting it in the oven because to me it makes it more flavorful. 

I would say this is a perfect date night activity if you are looking to bond in the kitchen! You can take turns making the dough and rolling it out, putting the toppings on it. Then the two of you can enjoy a homemade pizza that both of you made!  Or if you are single like me you can make it with a glass of wine it is just as fun and delicious! Next, I think I am going to try to make a cauliflower pizza crust, stay tuned!
